  1. This was the per­fect set. I shopped all over and even Bed, Bath and Beyond and major dept stores. To get this size roast­ing pan with the forks and all is a great deal. It is fab qual­ity and much nicer than expected. If you are doing two stuffed turkey breast roulades this is the size you need. The oth­ers are really too small. If you are going to get one make sure you look at the sizes. It ships fast and I love it. No, I would not use this on the stove top as oth­ers on reviews have commented.….this is the roast­ing pan for hol­i­days!! LOVE IT!!

    The above reviewer is cor­rect that Cook’s Illus­trated has updated its rec­om­men­da­tion of this pan. But, the actual review is in the ‘Equip­ment Cor­ner’ sec­tion of the July/August 2005 issue NOT the November/December issue.

    The Roti mod­els are not made with a three-ply con­struc­tion with an alu­minum core and mag­netic stain­less exte­rior. The Roti mod­els are made in China (not Amer­ica like the rest of the All Clad pots and pans) out of a non-magnetized stain­less steel. They’re not designed for use on induc­tion or con­ven­tional stove tops (a com­mon step in the prepa­ra­tion of gravy).

    A curi­ousity: The All Clad Web site doesn’t appear to list the Roti mod­els. I couldn’t find it under any cat­e­gory. This model is an orphan.

    I’ve used this pan for four years in the oven, the stove­top, for lasagna as well as roast­ing poul­try, and love it. The rack makes roast­ing a turkey (or what­ever else) easy–it always comes out great with no spe­cial attention–not even bast­ing. The forks are essen­tial for eas­ily mov­ing a heavy bird. I wish I’d got­ten this set much sooner than I did as it’s made hol­i­day meal prep far easier.

    The upright han­dles on the pan make mov­ing it more effi­cient than flat han­dles and the straight deep sides are great for a big lasagna or casse­role too. I haven’t found the coat­ing on the rack pre­vents par­ti­cles from stick­ing entirely, but it does clean up well in the dishwasher.

    I’ve never had any trou­ble start­ing gravy in the pan on the stove­top after remov­ing the bird and my pan has not warped as one reviewer men­tioned. I gen­er­ally pre­fer to remove the liq­uid from the pan after I’ve incor­po­rated the fla­vor­ful bits with a flat whisk, how­ever, so I can sep­a­rate out the fat. Then I add my flour slurry and the defat­ted liq­uid to a saucepan to fin­ish my gravy. I find this more con­ve­nient since my stove­top is usu­ally crowded with other pans.

    I love my All-Clad pans and have always been able to count on them to meet my needs so I never con­sid­ered spend­ing a lot on another brand. I’ve not been sorry. I love this pan. It added another thing to be thank­ful for when prepar­ing a big hol­i­day meal.

    For­get the neg­a­tive reviews! This pan does a fan­tas­tic job of roast­ing. I will be doing a 7 lb. Choice Beef Rib-eye roast for Christ­mas din­ner in it. It deglazes just like any other good SS pan.

    It is a tad heavy though, so don’t expect an alu­minum feel to it. Cleanup is just like any other SS pan… use Barkeeper’s Friend and it all done and shiny.

    There may actu­ally be bet­ter roast­ers out there, but that doesn’t mean this is not an excel­lent roaster!

    And BTW, it costs $199, no mat­ter where you look to buy it.
